Recipe: Powerful Peppermint Pudding

I put the word POWERFUL in the title because it sums up this sweet thing pretty well (and maybe because I was aiming for all the letters in the title to start with P...).

As taken from Food Facts, "Yams are a good source of vitamin C – 27% of the daily value for fighting infections such as colds and flu and quick wound healing, anti-aging, strong bones, and healthy immune function. It also provides good amounts of fiber, potassium, manganese, and metabolic B vitamins. The content of vitamin B6 (pyridoxine; 16% of the daily value) is good for shrinking the effects of homocysteine, which can do real damage to cell walls that could lead to heart attacks and/or stroke."

Well that was a bit too much science for me, I just think they're awesome because they taste good. And because I can use them to make this WICKED pudding!

And don't get me started on how amazing raw cacao powder is for you...(ahem...aphrodisiac...).


1 yam/sweet potato

1/2 cup coconut milk (from the can, not the stuff for cereal)

2 tbsp 100% pure maple syrup

2 tbsp raw cacao powder

Peppermint essential oil

Chop up the yam and steam it until soft. Pop everything (except the essential oil) in the blender and blend until smooth. Adjust the maple syrup if you want more or less sweetness. Then add 1 drop of Peppermint essential oil, blend until combined.

I like to eat it warm, but you can pop it into the fridge to cool down. This will also help to firm it up.

You can get REALLY crazy and add a drop or two of Wild Orange as well.
